Frozen Glory
Frozen Glory (see photo)
- 3 Tablespoons Light Rum
- 1/4 Cup Cream of Coconut
- 1/4 Cup Pineapple Juice
- 1 Scoop Crushed Ice
- 4 Tablespoons Frozen Pureed Strawberries2
- Tablespoons Blue Gelatin Mix (recipe follows)
- 1 (6) oz. Package Blue Gelatin
- 1 Cup Hot Water
- 1 Cup Blue Curacao
- Dissolve package of Jell-O in hot water and add the Blue Curacao. Gelatin should be firm in approximately 4 hours.
- Place the pureed strawberries in the bottom of a glass. Blend the rum, cream of coconut, pineapple juice and ice in a blender until smooth. Gently pour this Piña Colada mixture on top of the strawberries to create a layered effect. Pile the blue gelatin on top of the drink. Garnish with a pineapple slice and a cherry.
